Spinach Rice – A Green Dish for Blue Days

Winter is here again. Or at least it is back home. While most people up north are celebrating it with ‘saag’ and ‘makki ki roti’ I must conjure up some other green recipes of my own in order to compensate.

Found this recipe for Spinach Rice years ago in our very own Tarla Dalal’s cookbook. The husband loves it and its not too much hassle so I love it too.

Recipe for Spinach Rice

For the Spinach Mix :

Onion 1 – sliced

Ghee – 1 spoon

Chilies 3

Bundles of Spinach – 2

Potato 1 (if desired)

Rice – 2 cups

Green Peas – 1 cup

Salt

Prepping the Spinach Mix :

Take a spoonful of ghee and caramelize the onions in it for 5 minutes. Add the spinach, chilies and potato and cook for 7-10 minutes. Keep aside.

For the coriander Mix :

Lemon juice 1 tbsp

3 chilies

Half a bundle of coriander

Sugar 1 tsp

Salt

Coconut – shredded 2 tbsp (optional – since I never have this at home)

Prepping the Coriander Mix :

Corainder, Green chillies, lemon, salt , sugar; Grind into a mix

Put it all in a grinder with a little water and churn into a brilliant green paste.

Putting it together :

Add 2 and a 1/2 cups of water to your 2 cups rice and let them soak for about 1/2 an hour.

Put on a flame till half cooked.

Remove from the flame and add the coriander mix to it.

Put the Spinach mix back on the flame and add the Coriander mix laden half cooked rice to it.

Mix the spinach and the coriander-mixed rice; Add green peas and salt

Add the cup full of green peas to it.

Add salt ( remember that you have already put salt in the coriander mix).

Transfer into a bakeware dish and put an aluminium foil over it.

Put it in the oven for about 20 minutes at 180 degrees C.

And then dinner is served!

  1. Congratulations on completing 100 posts! Hopefully Someday you will have a compilation off all your blogs.

    BTW, Spinach rice was yummy, but cannot say the same about Chane ki Madra this time (lacked the gravy a bit)… Nonetheless, it was a treat alright 😉
